"Food Safety Certificate" Means Three Different Things — Here's Which One You Need
A food handler card, a professional training certificate, and company certification are three separate things. Buying the wrong one — or an online certificate your regulator doesn't accept — is a common and avoidable mistake.
People search for “food safety certificate online” wanting three quite different things. Before buying anything, work out which one applies to you.
The three things
1. A food handler certificate — for an individual working with food. If you work in a kitchen, café, catering operation or food retail, this is almost certainly what you need. It is a personal credential covering hygiene, temperature control, contamination and safe handling.
2. A professional training certificate — for QA, HSE and auditing roles. ISO 22000 Lead Auditor, Internal Auditor, HACCP training. These develop the competence to build and audit a food safety management system. They are for the person responsible for the system, not the person cooking.
3. Certification for the business itself. ISO 22000, or HACCP against the Dubai Food Code. This is not training at all — it is an independent audit of your organisation’s food safety system by an accredited certification body. It results in a certificate for the company, not for a person.
Numbers 1 and 2 are things you attend. Number 3 is something your business is assessed against. They are not steps in a sequence and one does not lead to another.
The mistake worth avoiding
An online certificate is only useful if the party asking for it accepts it.
Generic “food safety certificates” are widely available online, at low cost, from providers anywhere in the world. Many are perfectly legitimate as training. The question is whether your employer, your municipality, or your client will accept that specific certificate as evidence.
For food handlers in the UAE, requirements are set locally, and training providers operating here are licensed by the emirate’s regulator — KHDA in Dubai, ACTVET in Abu Dhabi. A certificate from an unlicensed overseas provider may not satisfy the requirement, however good the content.
Before you pay, ask the person who is asking for it: which certificate, from which type of provider, do you accept? Ten minutes of asking is cheaper than a certificate you cannot use.
That applies to us as much as anyone. If a course we offer does not meet the requirement you have been given, we would rather tell you than sell it to you.
If you need a food handler certificate
Check with your employer or the relevant municipality which providers and formats are accepted. Then confirm:
- Is the provider licensed by the emirate’s education regulator?
- Is the certificate accepted for the specific role and location?
- How long is it valid, and what does renewal require?
- Is any practical or in-person component required, or is fully online acceptable?
That last question matters. Some requirements can be met entirely online; others require an assessed practical or classroom element.
If you need professional training
ISO 22000 and HACCP auditor and implementer courses develop the competence to design, run and audit food safety management systems. They are appropriate for QA managers, food safety team leaders, internal auditors and consultants.
Delivery formats vary — self-paced online, virtual instructor-led, classroom, or on-site for corporate groups. For auditor-level qualifications, check whether the course is recognised by the certification scheme you intend to work under, because not all are.
Itmad Academy delivers ISO 22000 and HACCP programmes in these formats.
If your business needs certification
This is a different exercise. Your organisation implements a food safety management system, then an accredited certification body audits it.
- For a restaurant or food outlet in Dubai, that is usually HACCP certification against the Dubai Food Code
- For a manufacturer, processor or supplier, usually ISO 22000
Neither is training, and no online course produces one. What training does is make certification achievable — a system runs on the competence of the people operating it.
One structural point
An accredited certification body cannot consult on the management system it certifies. Training is treated differently from consultancy, but it is still worth understanding the separation: we train people, and we audit organisations, and we keep those distinct.
If a provider offers to train your staff, build your system and certify it, ask how they maintain impartiality — and verify their accreditation in the EIAC directory rather than accepting the answer.
Common questions
Can I get a food safety certificate entirely online? Sometimes. It depends on which certificate and who is asking for it. Confirm acceptance before purchasing, particularly for food handler requirements, which are set locally.
How long does it take? A food handler course is typically hours. Professional auditor training is days. Company certification takes weeks to months, because it involves implementing a system, not attending a course.
Does my certificate expire? Food handler certificates usually carry a validity period requiring refresher training. Professional training certificates generally do not expire, though schemes may require continuing development. Company certification runs on a three-year cycle with annual surveillance.
I have a HACCP training certificate. Is my restaurant HACCP certified? No. Your certificate covers you. Certification covers the business, and requires an audit of your actual operation.
Which should I do first? Train the people who will run the system, then certify the organisation. Doing it the other way round is how audits go badly.
Ask which applies to you — describe your role or your business and we will tell you which of the three you actually need. See food safety training and HACCP certification.
